Some highs

I had a high and low list but I forgot what my lows were for the first week of April.

SUGAR HIGH!

For Easter weekend, I wasn’t feeling particularly fabulous and subjected Nick to hours of bad TV. During one commercial break, he saw an ad for Mile High Peanut Butter Pie. So for his pain and suffering, I decided to make it and didn’t do so well. Part of the instructions called for wrapping the edges of the dough in foil to prevent burning. But I over-wrapped and that’s why in the second picture there’s an uncooked spot. Oh well. I tried.

Rest assured we didn’t eat the entirety of this un-holy creation of fat and butter. I had a small bit and I made Nick take the rest to his job for the guys.

Oh and because the tulips came early this year, he got me tulips for the house instead:

Last weekend, Nick made breakfast. I think I posted about this creation before. It’s his most favourite thing to make.

First you toast the bread in enough butter to make Paula Deen blush.

Then you brown some BACON!

Toss bacon on toasted bread, spread out.

Pour in beaten eggs (salt and pepper egg mixture)

Sprinkle on some herb-age, in this case parsley

More salt and pepper. Then pop in oven to finish cooking and puff up.

I didn’t take a picture of the finished product because I was famished by the time he was finished.

The reason I’m posting this is because of what happened after. I was complaining that I wanted juice and there was no damned juice in the house. I could easily have made tea but I wanted juice. So the following day, juice was on sale at the supermarket and I bought some.

Nick had to go to the pharmacy and he called to ask me if I wanted juice as he had to stop by the supermarket too. I told him that I’d already bought some. He comes up about an hour later (one day I will go into a discussion on why ANY shopping trip with Nick turns into hours long events) with a bag of “stuff.”

Sheepishly, he said, “I really wanted to get you juice but since you already bought it, I wanted to get you something.”

None of which I’ve ever used prior but it touched me all the same. He’s insane that one.

Cupcakes and Soup

I’m just posting these because I was damned proud of each attempt. We went to Costco a few weeks ago and came away with a ton of fruits and vegetables. Included were some really beautiful blackberries. I love blackberries but it confound me as to what to do with them.

Finally, I just made cupcakes. Tart and buttery they were good.020110 blackberry cupcake2

Then a few days after, I made this udon noddle soup that was truly superb. Because it was cold and both Nick and I were under the weather.

A craving

I’ve been doing a lot of thinking recently. Almost ever since I started taking the bus to work and started reading for the half an hour trip. The bus has taken over the hour long commute wherein I was largely gritting my teeth and doing anything but think.

But I digress.

I was thinking, for some odd reason of my very first NY bagel. Probably because a co-worker was telling me about her trip to NY during our lunch. But as I was sitting there, willing the older gentleman next to me to not inch closer, I thought about the first time I had a bagel.

It was about 11am and I had spent the night at my aunt’s place. She lived in a studio apartment on Queens Blvd (the Blvd of Death as it’s now known) and Yellowstone Blvd. That morning, we needed breakfast and true to tradition, couldn’t make breakfast. None of my aunts really know how to cook. So off we went to the bagel place, I may have been 11 or 12.

She ordered it with a thick slab of cream cheese spread around and lightly toasted. I still remember how that bagel tasted.

It’s crazy where your mind wanders off to sometimes. I think I just may be missing some things.

Reasons why…

……I finally understand why I’m ready to make Nick my husband, because after not being sure about some meat in the fridge (Nick has this habit of putting the meat that was left out too long in the freezer, clearly marked .. to be disposed of when the trash is almost ready to go out) … he calls and says, “Do I really want to chance getting food poisoning this soon before the wedding?”

Granted this bag of meat wasn’t marked, so there’s a chance it’s not spoilt at all. But still, in small ways, Nick always has my best interests in his heart.
